Dairy-free spirulina ice cream


Give yourself a protein and antioxidant boost and satisfy your craving for sweetness too! Too much sugar can play havoc with blood sugar levels, but there is research to suggest that spirulina might help address this, so an ice cream using natural sweeteners like stevia with added spirulina is a great way of having your ice cream and eating it.

Simply add 14oz of coconut milk, 1/4 cup of agave or maple syrup or the equivalent measure of stevia (a natural sweetener) and 1 tsp of spirulina to a blender or ice cream maker and mix. Place the well combined ingredients into a freezable container and place in a freezer for 3-4 hours. When you are ready to serve, let it thaw for 20 minutes then add whatever extras you like. Fruit, nuts and seeds, chocolate chips or crushed cookies all work well.

To make your spirulina ice-cream even creamier, simply add mashed banana to your mixture before blending.
